These keto fish cakes are so easy to make and taste delicious. Can be prepared in advance and are a great way to use wholesome ingredients to get a boost of protein. They are great for a light lunch or dinner served with a side salad.
Ingredients
- 1 cup / 220 g canned salmon, drained of liquid
- ¼ cup / 24 g almond flour
- 1 Tbsp shallot, chopped
- 1 tsp fresh dill, chopped
- 1 tsp fresh parsley, chopped
- ½ tsp garlic salt
- ½ tsp smoked paprika
- 1 large egg
- 2 Tbsp butter
Instructions
- In a medium bowl combine salmon, almond flour, shallot, dill, parsley, garlic salt, smoked paprika and egg. Stir to combine ingredients.
- Divide salmon mixture into 5 equal-sized portions. Shape portions by hand into rounded cakes about 1 inch thick. Set aside.
- Heat a large saute pan to medium-high heat. Add butter and melt. Place salmon cakes into pan and cook for 3 minutes on each side. As the salmon cakes cook, spoon melted butter from the pan on top of the cakes to keep them moist and flavorful.
- The cakes are done when crisp on both sides.
